Ingredients

3 med bell peppers, any color, chopped

2 medium onions, chopped

1 bunch of celery(5-6 ribs), chopped

8-10 cloves of garlic, minced

3 eggs, beaten

6 Tablespoons butter

1 1/2 cups breadcrumbs

1/2 cup milk

2 lbs lean ground beef

1 lb ground pork

1 Tablespoon Worcestershire

2 cups ketchup

1 1/2 teaspoons salt

2 Tablespoons honey

1 teaspoon nutmeg

1 teaspoon black pepper

1 teaspoon cayenne pepper

Preparation

Preheat oven to 400 degrees.

Melted butter in a skillet over medium high heat; saute peppers, celery, onion & garlic until golden. Add salt, pepper, cayenne, nutmeg & Worcestershire sauce to skillet. Saute briefly, then add 1/2 cup ketchup. Cook until ketchup is incorporated, then remove from heat and add 1/2 cup milk. Stir until well-mixed. Add breadcrumbs, stirring until a thick paste has been achieved. Allow the mixture to cool.

In a large bowl, combine pork, beef and 3 eggs. Mix well. Add the cooled vegetable mixture to the meat; combine well.

In a greased baking pan, form meat mixture into a loaf,about 6 - 8" wide & 1 1/2" thick. Mix together honey & remaining ketchup; spread over the loaf.

Bake at 400 for about 40 minutes
