Ingredients
4 eight oz. pieces of Mahi Mahi
1 tbsp. Cajun seasoning
1/8 tsp. cayenne pepper
FRUIT SALSA:
1 cup chopped fruits (cantaloupe, grape, kiwi)
1 tbsp. balsamic vinegar
1 tbsp. brown sugar
Preparation
- Mix the seasoning. Sprinkle the seasoning on the fish.
- Heat oil in pan and sear the fish on both sides.
- put in preheated oven (350) for 4-5 minutes. Fish should be firm to the touch.
- Arrange the fish on the plates and put the salsa on top of the fish.
