Ingredients
½ lb. andouille sausage
12 oz. frozen salad shrimp
29 oz. of rotel
2 cups mozzarella
2 oz. parmesan
1 jar of alfredo sauce (16 oz. ish)
Preparation
Heat oven to 350 Spread one cup of rotel in 13x9 ungreased pyrex Top with 5 cooked noodles, overlapping slightly as needed Layer with half of tomatoes, shrimp, sausage, alfredo, mozzarella Repeat with 5 more noodles, overlap again Layer with remaining ingredients, sprinkle parmesan on top Cover with foil, cook 30 minutes Uncover and cook 15-20 minutes longer Let stand 15 minutes before cutting Sprinkle with parsley if desired.
