package (9 oz.) frozen diced cooked chicken breast, thawed

cups cold cooked rice

stalks celery, diced (1 cup )

medium green onions, chopped (1/3 cup)

large tomato, diced (1 cup)

medium green bell pepper, diced (1 cup)

Preparation

In small bowl, combine vinegar and Cajun seasoning; mix well with wire whisk. Gradually beat in oil until well blended.

Add salad ingredients; toss to coat. Serve immediately, or cover and refrigerate until serving time.
