Ingredients

Black Eyed Peas:

1 tbsp olive oil

1 small medium onion chopped

1 clove garlic chopped

2 15 oz cans of black eyed peas

1 15 oz can of diced tomatoes

3 tsp cajun seasoning (more if you like spicer foods)

Cajun Seasoning:

4 teaspoons paprika

2 teaspoons salt

2 teaspoons garlic powder

2 teaspoons mustard powder

1 teaspoon black pepper

1 teaspoon white pepper

1 teaspoon cayenne pepper

1 teaspoon ground nutmeg

1 teaspoon thyme

1 teaspoon oregano

1 teaspoon cumin powder

Combine all seasoning ingredients in spice grinder or use a mortar and pestle. Use 3 tsp for black eyed peas. Store remaining spice mix in a tightly sealed jar. Makes 2 oz.

Fresh Cilantro leaves

Preparation

Heat oil in a Dutch oven. Add onion and garlic, saute till soft. Add black eyed peas, tomatoes and cajun seasonings. Bring to a boil then reduce heat and simmer for 20 minutes over medium-low heat stirring occasionally. Garnish with cilantro.
