Ingredients
4 oz. Italian bread
1 clove garlic, cut in half
Nonstick olive oil cooking spray
1/4 c. light mayonnaise
1/4 c. freshly grated Parmesan cheese
3 TBS lemon juice
1 TBS anchovy paste
pepper
1 pkg. romaine lettuce.
Preparation
Preheat oven to 400 degrees.
Cut bread into 1/2 in. thick slices. Rub bread slices on both side with cut sides of garlic. Cut bread into 1/2 in. cubes. Place in jelly roll pan. Spray bread liberally with cooking spray. Bake 10 min. Cool
Meanwhile, in large salad bowl, mix mayo, Parmesan, lemon juice, olive oil, anchovy paste, and 1/4 tsp. pepper
Add lettuce and croutons to dressing in bowl and toss.
