Ingredients
1 butternut squash, cut lengthwise and seeded
1/4 C pecan pieces
1/4 C Butter
1/4 tsp. appple pie spice
1/8 tsp. ginger
1/8 tsp. nutmeg
1/4 tsp. cinnamon
1 Tbs. Butterscotch liquer
1/4 C 100% Maple Syrup
1 tsp. brown sugar
1 dash salt
Preparation
Place squash face down in a baking dish with a small amount of water. Bake 45 minutes at 350 degrees Fahrenheit. In a med. saucepan combine butter, spices, sugar, maple syrup, and liquer and simmer on low heat. Scoop out squash and mash. Mix in butterscotch glaze reserving some to drizzle over the top. Sprinkle with cinnamon and serve.
