Ingredients
1/2 C. butter, room temp.
2 C. brown sugar
2 eggs
1 tsp. vanilla
1 & 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 C. shredded coconut
Preparation
Pre-heat oven to 350 degrees. Combine butter and brown sugar in sauce pot and cook over low heat until bubbling, stirring constantly. Remove from heat and let cool. Once cool add eggs, vanilla and stir. Then add flour baking powder, salt and coconut and stir until well blended. Spread in greased 9X13 pan. Bake for 25 min. Cut into squares while warm
