Ingredients

2 Tbs. butter

1 1/2 onion, chopped

1 1/2 Tbs. garlic, chopped

1 Tbs. ginger, minced

2 medium butternut squash, peeled and cubed

3 carrots, chopped

1/4 tsp. garam masala

1/2 tsp. cumin

1/8 tsp. cardamom

1/4 tsp. turmeric

1/4 tsp. red chili flakes

1 Tbs. salt

1 can coconut milk

1 Tbs. Tamari

Fresh Cilantro for garnish

Preparation

In a large sauce pan:

Melt butter. Add onion, saute until translucent. Stir in garlic and ginger. Add 5 cups of water, squash, carrots, and spices. Cover and simmer, 20 min. Puree ingredients. Salt and Pepper to taste. Add 1/2 can coconut milk and tamari. Garnish with cilantro
