Ingredients
5 cups (3/4inch) cubed and peeled butternut squash (2 lbs)
1/2 cup bread crumbs
4 teaspoons olive oil (divided)
2 cups thinly sliced onion (1 large, or 2 med)
1 tablespoon fresh chopped sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper.

1/2 cup (2 oz) crumbled blue chees.
Preparation
Preheat oven to 400º
- Steam squash, covered for 10 minutes (until tender)
- Add 2 teaspoons of oil to bread crumbs, toss to combine
- Heat remaining 2 teaspoons of oil in a large skillet. Add onions saute 5 minutes till tender, stirring occasionally.
- Transfer onion mixture to a large bowl.Add squash, chopped sage, slat, black pepper to bowl, toss to combine.
- Spoon squash mixture into a baking dish coated with cooking spray. Bake @ 400º for 20 minutes.
- Sprinkle with blue cheese and sprinkle with bread crumbs. (EVENLY).
- Bake an additional 10 minutes or until cheese is melted and crumbs are golden brown.
