5 TBsp butter 21/2 cup chop leeks 1/2 cup each of chop carrot & celery 2 small granny smith apple choped 11/2 Tsp dried thymes

5 cup chicken stock 11/2 cup apple cider 2/3 cup sour cream 1/2 cup whipping cream chopped freach chives
Preparation
- sauta leeks, carrot, celery, apple 2) add chicken stock, and apple cider 3)add sage and thyme cook for 35 mins 4) puree in the blender 5)add whip creams, salt and pepper 6) sour cream and reduce apple cider 7) add chives on top
