Ingredients
1 pie crust
2 cup sugar
2 Tbl cornmeal
5 large eggs, lightly beaten
2/3 cup buttermilk
1/2 cup crushed pineapple, drain
1/2 cup sweetened flaked coconut
1/4 cup butter, melted
2 tsp grated lemon
2 tsp fresh lemon juice
1 tsp vanilla
Preparation
Combine sugar and cornmeal. Stir in eggs and buttermilk. Add remaining ingredients and mix well. Pour into unbaked pie shell. Bake at 350 for 45 minutes or until top is lightly browned.
