Ingredients

1 cup lowfat buttermilk

4 8 0z bone in chicken breasts, skinned

1/3 cup flour

1/3 cup cracker meal

S&P

2 t butter

Coleslaw

Preparation

  1. Preheat oven to 425 degrees
  2. Combine buttermilk and chicken in a shallow dish, turning to coat.
  3. Combine flour and cracker meal in shallow dish. Sprinkle chicken wit hS&P, dredge in flour mixture. Set aside.
  4. melt butter in large ovenproof skillet over med high heat. Add chicken to pan, meat side down. cook 4 minutes until golden brown. Turn over and bake at 425 for 32 minutes or until thermometer registers 165 degrees. Seve with coleslaw.
