Ingredients

½ cup plain flour

½ teaspoon soda

1½ teaspoons double-acting baking powder

1 tablespoon sugar

1 teaspoon salt

1½ cup yellow or white corn meal

1 cup buttermilk

2 eggs

3 to 4 tablespoons cooking oil (I use olive oil)

Preparation

Preheat oven to 425 deg.

If using iron skillet, grease and preheat for two minutes in hot oven before pouring in batter.

Have all ingredients at room temperature (about 75 deg.)

Combine ½ cup plain flour ½ teaspoon soda 1½ teaspoons double-acting baking powder 1 tablespoon sugar 1 teaspoon salt 1½ cup yellow or white corn meal

Combine and beat: 1 cup buttermilk 2 eggs 3 to 4 tablespoons melted butter or oil (I use olive oil)

Stir the liquid into the dry ingredients with a few swift strokes. Pour batter into a greased 9X9 inch pan, baking dish, or 10 ½ inch (preheated) iron skillet and bake for about ½ hour.
