Ingredients
3 cups All-Bran cereal
1/2 cup vegetable oil
1 cup raisins
1 cup boiling water
2 1/4 cups whole wheat flour
1 cup firmly packed brown sugar
2 1/2 tsp baking soda
1/2 tsp salt
2 eggs
2 cups buttermilk**
** 2 tbsp vinegar or lemon juice, plus enough milk to make 2 cups can be used instead of buttermilk
Preparation
Mix together cereal, oil and raisins. Pour on boiling water and let stand while preparing other ingredients (at least 10 minutes)
Combine flour, sugar, soda and salt
Lightly beat eggs and mix with buttermilk. Add to cereal mixture; beat well
Add flour mixture, stirring only until combined Let stand at least 15 minutes before baking. Do not stir.
Spoon batter into greased or paper-lined muffin cups, filling about 3/4 full. Bake at 400F about 20 minutes or until browned.
