Ingredients

3 c. chopped cooked leeks, well drained

3/4 c. matzoh meal

2-3 eggs

salt and pepper to taste

Vegetable oil for frying

Preparation

Heat oil to 360. Clean fresh leeks, split and chop into 1/2" pieces (use both green and white portions) Boil the chopped leaks until barely tender, then drain well in collander. Mix leeks w/ remainder of ingredients and let stand 15 minutes. Slide spoonfuls of mix into oil, forming patties about 3/4" thick, and 3" in diameter. Fry until golden brown.
