Ingredients

1/2 c medium bulgur

1 large bunch parsley

1 c cooked chickpeas

1 small bunch green onions, finely chopped

3 tomatoes, finely chopped

1 cucumber, finely chopped

1/2 c chopped mint

1/4 c olive oil

1/4 c lemon juice

1 t salt 1/2 t pepper

1/8 cayenne

Preparation

cover bulgur in warm water, soak 10 minutes. drain thru fine mesh strainer, pressing out water. combine bulgur, parsley, chickpeas, onions, tomatoes, cucumber, mint in medium bowl. mix oil, lemom juice, salt pepper, cayenne. pour over veggies, stir gently, refridgerate 1 hour then toss and serve
