Ingredients
200g bulgar wheat
1 pint of hot chicken stock
35g parsley
100g mixed vegetables
147g red onion
1/8 cup olive oil
Preparation
Pan fry red onions in 1 tsp of olive oil for 3 minutes then remove from heat.
Place bulgar wheat in saucepan and add stock. Place on medium heat.
After 7 minutes add mixed veg and red onions. Cook for further 2 minutes and stir in parsley and olive oil. Cook for a further 6 minutes or until bulgar wheat is soft.
Serve immediately.
