Ingredients

4 4oz buffalo tenderloin steaks

1/4 cup pesto

4 slices bacon

salt & pepper to season

2 sheets puff pastry

Preparation

wrap bacon around buffalo secure with wooden picks season with salt and pepper then brown on all sides in a hot pan with some olive oil. set aside to cool remove wooden picks. place equal portions of pesto onto buffalo wrap tightly in clear film and refrigerate for 45 min. roll out puff pastry to 1/4 thickness or enough to cover two steaks wrap up streaks in puff pastry sealing with egg wash make sure pesto is on top. Bake in a 350 oven for 45 min or until pastry is golden. let stand 5 min before serving
