Ingredients

3/4 c. buckwheat flour

1/4 c. whole wheat flour

1 3/4 tsp. baking powder

3 tbsp. peanut oil

1/2 c. wheat germ

3 tbsp. raw sugar

2 eggs, lightly beaten

Milk or water (around a cup)

Preparation

In a bowl, mix together the buckwheat flour, wheat germ, whole wheat flour, sugar, and baking powder. Stir in the eggs, oil and enough water or milk to make a batter the consistency of thick heavy cream. Ladle the mixture onto a hot, oiled griddle (~350 deg). When holes appear on the surface of the pancakes, turn to brown second side.
