Ingredients

1 pound margarine

3 teaspoons vanilla

2 pounds confectionary sugar

2 1/2 cups peanut butter ( 2 18oz jars, 1 plain and 1 chunky)

Preparation

Melt margarine, add in vanilla and peanut butter. Mix with beater while adding approximately 1/2 sugar, finish adding sugar while mixing by hand. Refrigerate for about 10 minutes. Remove, roll into small balls and place on wax paper, then place a toothpick in each one and place into freezer for about 15 minutes. Meanwhile, melt melting chocolate over a double boiler. Dunk the balls into the chocolate until only a little of the peanut butter shows on top. Place back onto the cookie sheet and let cool.
