Ingredients
1 yellow onion, medium diced
2 tablespoons olive oil
1 bag (8-10 ounces) chopped spinach
1 48-ounce can crushed tomatoes in juice
1 6-ounce can tomato paste
6 ounces quality catsup
1 pint low-sodium chicken broth
pinch of dried basil
pinch of sugar
ground sea salt and ground pepper to taste
Preparation
In a medium stockpot, saute the diced onion in olive oil until translucent. Add crushed tomatoes, tomato paste, catsup and low-sodium chicken broth. Simmer for 30 - 45 minutes. Finish the soup by adding the frozen chipped spinach, sugar, basil and spices. Cook until heated.
