Ingredients
2 pounds large prawns (15 to 25 count should do just fine). If you are a shrimp lover, make sure you buy frozen gulf coast prawns, NOT farm raised.
1/3 cup good olive oil (or enough to drench the prawns)
2/3 cup bread crumbs. I like to use and Panko bread crumbs.
2 cloves garlic finely chopped
Large a tablespoon fresh chopped parsley
Salt and pepper to taste.
Preparation
Shell and clean the prawns and then rinse in cold water. Then dry thoroughly with paper towels.
Add all ingredients to a large bowl and allow flavors to meld for 30 minutes.
Skewer 5 or 6 prawns at a time. Grill prawns directly over hot coals for about 1 min. per side. They should just begin to chart.
Neatly place grilled skewers on serving platter and serve with fresh lime wedges
