Ingredients

1.5lbs brussel sprouts

8 slices bacon, chopped

3T cider vinegar

2t sugar

1t Dijon

1/2 t pepper

1/4 t salt

1/3 c olive oil

Preparation

  1. Trim root ends of sprouts; cut half in half and quarter rest.
  2. Cook bacon 4 - 5 mins or until crisp. Add sprouts and cook, stirring, for 4 mins. Add 1 T water, cover, reduce heat to low and cook for 5 minutes or until sprouts are tender-crisp
  3. Whisk together vinegar, sugar, mustard, pepper and salt. Slowly whisk in oil.
  4. Pour vinaigrette over sprouts mixture in skillet and toss to coat. Serve warm.
