Ingredients

1 lb. of fresh Brussel Sprouts (trimmed)

3 tbs. olive oil

3 tbs. Soy Butter/lo-fat butter

salt & pepper to taste

Preparation

First, trim the butts off the Brussel Sprouts. Next, cut in half or, if their large enough coin each sprout. Place brussel sprouts in a medium sized frying pan, and generously cover with olive oil, or until each sprout is visibly moistened.Scoop the 3 tbs. of butter onto the sprouts, and cover. Keep on high heat for 8 minutes, or until the leafy edges of the sprouts starting turning brown. Note that it may help to give the pan a toss a few times.
