Ingredients

12 oz bacon, cut into matchsticks

Olive Oil

2 tbsp butter

2 lbs brussel sprouts, halved

1 tsp honey

1/2 tsp crushed red pepper (optional)

Preparation

Heat oil and add bacon and cook over med-high heat until bacon is crispy and fat is rendered, about 15 mins. Transfer bacon to a paper towel to drain and discard all but 2 tbsp of bacon drippings. Return skillit to heat and add butter. Add brussel sprouts and, stirring occasionally, cook for 10 mins. Add honey and continue cooking until golden brown and carmelized, approx 8 mins more. Season w/ S & P, crushed pepper and garnish w/ bacon.
