Ingredients

4 medium, ripe tomatoes

1/3 cup shredded fresh basil leaves

1 teaspoon sugar

salt and pepper

1 loaf Italian bread

2 garlic cloves

3 tablespoons extra virgin olive oil

Preparation

  1. Core tomatoes and cut into 1/2" dice. Put tomatoes in a colander and drain off excess water.
  2. In medium bowl, combine tomatoes, basil, sugar, and salt and pepper to taste.
  3. Cut bread into 1" slices and grill to a golden brown on both sides.
  4. Place toast on a platter and rub both sides with garlic, then brush with oil.
  5. Use a slotted spoon to divide tomato mixture on toast slices. Serve immediately.
