Ingredients

10-12 ripe plum tomatoes

1/2 to 3/4 cup balsamic vinegar (enough to marinate tomatoes in)

1 teaspoon sugar

2 tablespoons chopped garlic

1 medium sweet onion, diced

1 tablespoon olive oil

1 tablespoon chopped basil

Salt and pepper to taste

Baguette, sliced thinly

Mozzarella cheese, sliced (optional)

Preparation

Mix all ingredients in a bowl and let stand 2-3 hours.

Toast bread - you can spray bread with olive oil before toasting if you like. Put slice of mozzarella cheese on each toast and cover with tomato mixture.
