Ingredients

Crostini

Day old crusty bread, baguette is best, cut on a bias about 1/4 thick

2 Tblsp Olive Oil

1 Clove of Garlic

Fresh Cracked Black Pepper

Topping

2-3 Roma Tomatoes, seeded and chopped into 1/4 squares

2 Tblsp Olive Oil

1 Tblsp Dried Basil

1 Tsp Dried Oregano

1 Tblsp Balsamic Vinegar

Salt and Pepper to taste

Preparation

Preheat Broiler, place rack at second highest point in oven

Brush bread with olive oil

Crack a good amount of fresh Black Pepper over each piece

Toast until golden, turn and repeat on second side

Pull bread out of oven, allow to cool for 2-3 minutes

cut one end off of Garlic Clove, rub on each slice of toast

Topping

Mix all ingredients and enjoy!
