Ingredients

1/2 pound mozzarella cheese, cut in small cubes

2 medium tomatoes, red ripe, diced

1 cup vidalia onion, thinly sliced

salt

pepper

3 tablespoons olive oil

1 cup basil leaves, cut crosswise

12 slices crusty french bread

4 large garlic cloves, peeled and halved

Preparation

Toss the mozzarella, tomatoes, and onion together in a mixing bowl. Generously salt and pepper to taste, add 2 tablespoons of the oil and the shredded basil and toss well. Taste for seasoning. Toast the bread until golden brown on both sides. Rub the toast firmly with the garlic and drizzle lightly with the remaining oil, using a little more oil if necessary. Distribute the tomato-mozzarella salad evenly over the bruschetta and serve immediately.
