Ingredients

1/2 c. packed fresh basil leaves

1/4 c. fresh parsley

6 cloves garlic, minced

1 t. lemon juice

1 1/2 c. olive oil

salt and pepper to taste

4 boneless skinless chicken breasts

4 slices mozzarella or provolone

4 fresh tomato slices

Balsamic vinegar

Preparation

Blend first six ingredients in food processor. Marinate chicken for 30 minutes in olive oil mixture. Reserve marinade. Heat grill. Grill chicken until no pink remains in center and juices run clear, basting with reserved marinade as it cooks. When chicken is nearly done, place one slice of tomato and one slice of cheese on each chicken breast. Allow cheese to melt. Drizzle with balsamic vinegar just before serving.
