Ingredients

1 package of brownie bites

1 cup heavy whipping cream

1 tablespoon light corn syrup

8 ounces semisweet chocolate

Preparation

1 - 2 packages of chocolate covered espresso beans ( I use the Caribou Coffee Brand)*

Bring heavy whipping cream and corn syrup to a boil over med-high heat. Remove from heat and add chocolate, Stir until melted and smooth. Pour into a bowl and let stand to cool for 10-15 minutes. Ice the tops of the brownie bites with an offset spatula. Top with a single chocolate covered espresso bean.

At Christmas time I omit the espresso beans and sprinkle crushed candy canes over the tops of the glazed brownie bites.
