Ingredients

3-4 lb pork loin

1/2 cup brown sugar

1/3 cup yellow or dijon mustard

2 cups of chicken broth

salt and pepper to taste

Preparation

Preheat oven to 250 degrees. In a medium bowl, mix brown sugar, broth, and mustard. Place pork loin in a shallow roasting pan. Add the liquid mixture right over the meat. Place a lid or foil over the pan and cook for 4 hours. Basting every hour or so. After the 4 hours are up, remove half of the liquid from the pan and turn up the heat to 450 degrees for 25-30 minutes to get a nice crisp skin. You can use the liquid you removed for a great sauce by adding corn starch or flour!
