Ingredients
2 1/2 cups whole wheat flour
1/2 cup all purpose flour
1/2 cup steel-cut oats
2 tbs brown sugar
1 tbs wheat germ
1tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups buttermilk
1 lg egg lightly beaten
Preparation
- Preheat oven to 325 deg.
- Coat a 9" X 5" or 8 1/2" X 4 1/2" loaf pan with cooking spray. Line the pan with parchment paper, and coat with cooking spray.
- Combine flour and next six ingredients (through salt). Combine buttermilk and egg; add to flour mixture. Stir until just combined.
- Spoon the mixture into prepared pan. Bake at 325 degrees for one hour and five minutes or until wooden toothpick inserted in center comes out clean. Inverts bread onto a wire rack; cool completely.
