Ingredients

1 cup ~ Brown Rice ~ uncooked

4 T. ~ Extra Virgin Olive Oil

1 ~ Small Zucchini ~ shredded

1 ~ Large Onion ~ sliced thin

1/2 ~ Head of Cabbage~ sliced thin

1 ~ Medium Sweet Potato ~ shredded

1 ~ Small Kohlrabi ~ shredded

1 ~ Large can of Muir Glen diced Tomatoes with basil and garlic

3 ~ Larger peppers ~ cleaned and tops removed

1 ~ Small can of Muir Glen tomato paste ~ topping

Preparation

  1. Cook Rice ~ until slightly tender

  2. Sauté all veggies in olive oil,sea salt,and freshly ground pepper

  3. Add the tomatoes

  4. Add the rice

  5. Fill 3 larger bell peppers. Take the extra filling and scoop it around the filled peppers in covered pot or casserole dish

    • spread tomato paste on top of all
  6. Cover and bake @ 350 until your peppers are tender

  7. Enjoy!!
