Ingredients
1 cup ~ Brown Rice ~ uncooked
4 T. ~ Extra Virgin Olive Oil
1 ~ Small Zucchini ~ shredded
1 ~ Large Onion ~ sliced thin
1/2 ~ Head of Cabbage~ sliced thin
1 ~ Medium Sweet Potato ~ shredded
1 ~ Small Kohlrabi ~ shredded
1 ~ Large can of Muir Glen diced Tomatoes with basil and garlic
3 ~ Larger peppers ~ cleaned and tops removed
1 ~ Small can of Muir Glen tomato paste ~ topping
Preparation
Cook Rice ~ until slightly tender
Sauté all veggies in olive oil,sea salt,and freshly ground pepper
Add the tomatoes
Add the rice
Fill 3 larger bell peppers. Take the extra filling and scoop it around the filled peppers in covered pot or casserole dish
- spread tomato paste on top of all
Cover and bake @ 350 until your peppers are tender
