Ingredients:
2 lb 95% ground beef
1 cup long-grain brown rice (uncooked)
1 cup finely chopped onion (about 2 medium)
1 large egg (beaten)
1 tsp table salt
1 tsp ground black pepper
Large can low-sodium tomato juice (46-oz)
Preparation
- Soak brown rice in water overnight.
- Drain rice & combine w/ ground beef & all other ingredients except tomato juice in a large bowl.
- Preheat oven to 350 degrees F
- Form ground beef mixture into 24 meatballs
- Arrange meatballs in oven-proof baking dish
- Pour tomato juice over meatballs & bake for 90 minutes or until knife inserted into the center of a meatball comes out clean.
