Ingredients

2 tblsp olive oil

1 medium onion, chopped

1 red bell pepper, chopped

1 lb chicken sausage, sliced or chunked

1 clove garlic, minced

1.5 cups brown rice

3 cups low sodium gluten free chicken broth

2 cups spinach or basil leaves, washed

Preparation

saute onion pepper and chicken sausage in oil over medium high heat until sausage is cooked through or nearly so

add garlic and saute for another 2 or three minutes

stir in rice add broth bring to a boil then reduce to simmer, cover and cook for 45-50 minutes or until almost all liquid is absorbed.

stir in spinach or basil
