Ingredients
1/2 pound brown rice pasta, cooked al dente
1 large shallot, thinly sliced
1 Tbsp. Canola oil
1/2 large carrot, shaved into thin strips
1 cup frozen green peas
1/2 cup feta cheese
Preparation
- Cook brown rice pasta according to package directions. Rinse well prior to tossing with vegetables.
- While pasta is cooking, saute shallots in canola oil until tender and beginning to brown, in large skillet.
- Add carrots, peas, and 1/4 cup of water and simmer for 3-4 minutes.
- Salt and pepper to taste, and reserve until pasta is done.
- Rinse pasta well, and add pasta to vegetables, tossing gently to blend.
- Add feta cheese, blending gently, serve immediately.
