Ingredients

1/2 pound brown rice pasta, cooked al dente

1 large shallot, thinly sliced

1 Tbsp. Canola oil

1/2 large carrot, shaved into thin strips

1 cup frozen green peas

1/2 cup feta cheese

Preparation

  1. Cook brown rice pasta according to package directions. Rinse well prior to tossing with vegetables.
  2. While pasta is cooking, saute shallots in canola oil until tender and beginning to brown, in large skillet.
  3. Add carrots, peas, and 1/4 cup of water and simmer for 3-4 minutes.
  4. Salt and pepper to taste, and reserve until pasta is done.
  5. Rinse pasta well, and add pasta to vegetables, tossing gently to blend.
  6. Add feta cheese, blending gently, serve immediately.
