Ingredients
4 grams fresh yeast
12 oz brown ale(warm to 80)
4 Tbs molasses
2 oz olive oil
12 oz high gluten flour
2 oz whole wheat flour
1 Tbs kosher salt
Preparation
Prepare the dough in 2 batches. Dissolve the yeast in warm beer for 1 min. W/ dough hook attachment running add the remaining ingredients & mix for 10 min. Place on floured surface. Repeat w/ 2nd batch. Roll each batch into tight balls, lightly brush w/ oil. Cover loosely w/ plastic & let rise 1 hr. Punch down & form into 12-14" dia. Top w/ sauce. Bake at 450 for 20 min.
