Ingredients

CRUST:

1 box Zweibach, crushed

3 tablespoons sugar

1 teaspoon cinnamon

one quarter pound butter, melted

CHEESECAKE:

one half pint light cream

one and one-half pound cream cheese

1 teaspoon vanilla

5 eggs separated, yolks beaten, whites beaten to soft peak

1 tablespoon flour

one and one-quarter cups sugar

TOPPING: 2 tablespoons cinnamon sugar

Preparation

Preheat oven to 350. Mix crust ingredients together. Pat into bottom and half way up sides of 10" spring form pan. Beat together the cream and cream cheese until light, beat in vanilla, egg yolks, flour and sugar. When fully incorporated, gently fold in egg whites. Pour into pan, sprinkle with cinnamon sugar and bake for one hour. Turn off oven and allow to cool in oven for one hour.
