Ingredients

2 baskets cherry or grape tomatoes

1 tbspn. olive oil

1/3 c. whole or skim milk ricotta cheese

2 tbspn. fresh mint, chopped

salt and pepper to taste

Preparation

Spread tomatoes onto cookie sheet. Add olive oil, kosher salt and freshly ground pepper to taste. Place under broiler at high heat for approx. 10 minutes or until tomatoes have split open and are turning brown. Strain tomatoes to remove the excess juices. Place in a bowl and add ricotta and mint. Taste and add salt and pepper as necessary.
