Ingredients

Sea scallops, 3/4#, 12 pcs

Scallions, thin, white part only

Proscuitto,1/2#, sliced thinly

Preparation

Cut scallops in half, crosswise into 24 pieces. Cut proscuitto lenghtwise into 1-1/4" wide strips (24 pieces). Cut scallion into 24 1" pieces. (If large, halve 12 pieces lengthwise).

Roll 1 piece scallop & 1 piece scallion in proscuitto strip. Secure with toothpick, through scallion.

Place under preheated hot broiler, close to flame for approximately 4 minutes each side or until crispy. Serve immediately.
