Ingredients

1 lb chicken

3 tbsp peanut oil

3 tbsp chopped cilantro leaves

2 limes

1 tbsp chopped shallot

1/4 tsp cayenne

salt

pepper

Preparation

Combine peanut oil, 2 tablespoons cilantro, 1 tablespoon lime juice, shallot, cayenne, and some salt and pepper. Spread half in a pan and add the chicken; sprinkle with salt, pepper, and the remaining mixture. Broil until cooked through. Garnish with chopped cilantro and lime wedges.
