Ingredients

1 TBSP vegetable oil

1 onion chopped

1 carrot diced

3 cloves garlic chopped

1/2tsp oregano

salt and pepper to taste

4 cups vegetable or chicken stock

1 cup pasta sauce

1/2 lb frozen cheese or meat tortellini

2 cups broccoli

1/4 cup parmesan

Preparation

-in saucepan, fry onion, carrot, garlic, oregano, salt and pepper about 5 mins. -add stock and pasta sauce, bring to boil.

  • add tortellini, reduce heat, cover and simmer until pasta is tender -add broccoli and return to simmer, cook until piping hot and broccoli is tender-crisp, about 1 min. -ladle into soup bowls and sprinkle with cheese
