Ingredients
2 packages frozen chopped broccoli
1 small head cooked broccoli, chopped
1/2 cup mayonnaise
2 T fresh lemon juice
1 can cream of mushroom soup
1 cup cheddar cheese
Ritz crackers crumbled and sauteed in butter
Preparation
- Cook broccoli.
- Put all of the cooked, frozen broccoli in the bowl of a food processor.
- Add the mayonnaise, lemon juice, mushroom soup and cheddar cheese in the bowl of the food processor and process till well mixed.
- Stir in (by hand) the cooked, chopped fresh broccoli.
- Mix well and put in buttered casserole dish.
- Top with buttered Ritz cracker crumbs.
- Bake at 350 degrees for 35-45 minutes, until bubbly.
