Ingredients
2 - 3 small head broccoli
6 to 8 slices cooked bacon, crumbled
1/2 cup chopped sweet onion
1/2 cup dried cranberries
4 oz roughly chopped pecans
1/2 cup halved cherry tomatoes
8 oz chevre style goat cheese, optional
3/4 cup mayonnaise
3 tablespoons apple cider vinegar
3 tablespoons dijon or honey dijon mustard
2 tablespoons sugar
Salt and white pepper
Preparation
REmove the broccoli stem and leaves. Cut the broccoli into bite-size florets. Place in a large bowl. Add the crumbled bacon, onion, cranberries, pecans, tomatoes, and if using, goat cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.
