14-16 oz broccoli florets

1 lg leek-cleaned-cut into 1/2 circles

EVOO/Pam

1/2 tbsp butter

I Can’t believe it is not Butter

1-2 tbsp white wine

2-3 tbsp chix broth/stock

juice from 1/2 lemon

s&p

Preparation

  1. saute leeks in Pam/EVOO-till soft 2.deglaze w/wine-ck till evaporated 3.add broth-ck till evaporated & leeks very soft
  2. ck broccoli in salted h2o for 10 min-drain 5.put back in pot add butter& I can’t believe it is not butter & leeks
  3. season w/ lemon juice-s&p
  4. puree w/ immersion blender-adjust seasoning
