Ingredients
500gm broccoli,cut into chunks
150gm onion,sliced
2pcs bay leaf
150gm potato,sliced
80ml vegetables stock
100ml butter
200gm parmesan cheese
salt & pepper to taste
150ml single cream

Preparation
1)saute the onion & bay leaf in butter till fragrant & then add in the broccoli&potato.keep on sauteing untill the potatoes are half cooked. 2)next,add in the vegetables stock,bring to a boil &allow the stock to simmer until the broccoli becomes tender. 3)then,strain the stock frm the vegetables&remove the bay leaf.the bay leaf can overpower other flavours in the soup if it is not removed. 4)next,blend the strained broccoli &potato together with the stock.once it’s well blended,bring it to a boil & season with salt,pepper&parmesan cheese.before serving,add cream& decreate with croutons.
