Ingredients
1 c chopped onion
2 garlic cloves, minced
3 c fat free broth
1 16 oz pkg broccoli
2 1/2 c 2% milk
1/3 c flour
1/4 tsp black pepper
8 oz Velveeta light
Preparation
- Heat large nonstock saucepan coated with cooking spray over med-high heat. Add onion and garlic; saute 3 min or until tender. Add broth and broccoli. Bring broccoli mixgture to boil over med -high heat. Reduce heat to med, cook 10 min
- Combine milk and flour, stiring with a whisk untill well blended. Add miklk mixture to broccoli mixture. Cook 5 min until slightly thick, stir constantly. Stir in pepper. Remove from heat; add cheese, until cheese melts.
- Place one third of the soup in a food processor or blender and process until smooth. Return to soup mixture.
