Ingredients

4 loaves French bread,large diced

18 eggs, beaten

4 cups heavy cream

1/2 tablespoon Kosher salt

1 1/2 tbs.white pepper

1/2 lb. caramelized yellow onion

1 stick butter, melted

3/4 lb. blue cheese, crumbled

Preparation

Preheat oven to 350 F. Butter one 12 inch x 18 inch x 2 1/2 inch baking pan, set aside.

In a large mixing bowl combine all ingredients together and mix well. Place mixture into prepared pan. Place pan into a water bath and place into heated oven. Bake until the pudding is just set. Remove the pudding from the water bath. Allow pudding to cool slightly before serving.
